Mannosylfructose-phosphate phosphatase (EC 3.1.3.79, mannosylfructose-6-phosphate phosphatase, MFPP) is an enzyme with systematic name β-D-ructofuranosyl-α-D-mannopyranoside-6F-phosphate phosphohydrolase.{{cite journal | vauthors = Torres LL, Salerno GL | title = A metabolic pathway leading to mannosylfructose biosynthesis in Agrobacterium tumefaciens uncovers a family of mannosyltransferases | journal = Proceedings of the National Academy of Sciences of the United States of America | volume = 104 | issue = 36 | pages = 14318–23 | date = September 2007 | pmid = 17728402 | pmc = 1964871 | doi = 10.1073/pnas.0706709104 | doi-access = free }} This enzyme catalyses the following chemical reaction
: β-D-fructofuranosyl-α-D-mannopyranoside 6F-phosphate + H2O
β-D-fructofuranosyl-α-D-mannopyranoside + phosphate
This enzyme, from the soil proteobacterium and plant pathogen Agrobacterium tumefaciens strain C58, requires Mg2+ for activity.
