Growing up in a farming community, Quintero helped with agricultural work and household chores from an early age. In 1998, at 16, he moved to Berkeley, California, with his mother and continued his education. Quintero started mountaineering in 2012 when he climbed Mount Whitney, the highest mountain in the contiguous United States, in California's Sierra Nevada. Since then, he has explored and climbed several peaks in the Eastern Sierra range and has become an experienced high-altitude mountaineer.

In 2022, Quintero became the first Honduran to summit Mount Everest, the highest mountain in the world. As of 2024, he has climbed five of the highest mountains in the world.

In addition to mountaineering, Quintero is a CrossFit Level 2 Trainer and has competed in several endurance sports. He has appeared on the NBC reality television show Spartan: Ultimate Team Challenge, where teams of athletes compete in obstacle races.

Quintero also works as a CrossFit level 1 coach at several San Francisco Bay Area gyms. From July 2016 to May 2018, he coached at Grassroots CrossFit near the University of California, Berkeley campus. In May 2018, he joined Brick Northern California as a CrossFit l1 Coach, working for over four years until July 2022. In November 2024, Quintero began working as a CrossFit Level 2 Coach at Exhale Fitness, continuing his coaching career.

Quintero lives in Berkeley, United States, with his wife and daughter. He is involved in coaching, motivational speaking, and promoting physical fitness.
