Matzo lasagna (sometimes spelled matzah lasagna), also known as matzagna,{{cite web |title=Matzoh Lasagna |url=https://www.delish.com/cooking/recipes/a46885/matzoh-lasagna/ |website=Delish |date=25 April 2016 |access-date=5 March 2021}} is a Jewish type of lasagna made by layering sheets of matzo with typically a tomato or a bechamel sauce and various cheeses. It originated from the Italian Jews and is popular in Israel, the United States, and the rest of the diaspora. It is similar to the traditional Sephardic Jewish dish mina; though the fillings differ as mina is typically made with meat or a spinach and feta filling, while matzo lasagna is made with sauce and cheese.{{cite news |last1=Clark |first1=Melissa |title=Matzo Lasagna |url=https://cooking.nytimes.com/recipes/1020158-matzo-lasagna |access-date=5 March 2021 |agency=The New York Times |publisher=NY Times}}

Background

During Passover, Jewish law prohibits the consumption of food items other than matzo that are made with wheat or other similar grains.{{cite book |last=Atkinson |first=Kenneth |date=2009 |title=Judaism |url=https://books.google.com/books?id=Zk4cbyfcX5IC&pg=PA93 |publisher=Infobase Publishing |page=93 |isbn=978-1438106441}} Given these restrictions, some individuals will make lasagna by substituting matzo for traditional wheat pasta sheets. Some people substitute cottage cheese or farmers cheese and abstain from ricotta cheese during Passover as Kosher-for-Passover varieties are difficult to find.{{cite web |title=Passover Spinach and Cheese Lasagna |url=https://www.kveller.com/article/passover-spinach-and-cheese-lasagna/ |website=Kveller |access-date=5 March 2021}}{{cite web |title=Passover Matzo Lasagna |url=https://www.allrecipes.com/recipe/212739/passover-matzo-lasagna/ |website=Allrecipes |access-date=5 March 2021}}

History

Matzo lasagna descended from a local Italian Jewish variant of a much older Sephardic culinary tradition of Passover pies, or casseroles, called minas. Minas are composed of sheets of matzo layered with savory ingredients and baked. Some have ground lamb in a tomato sauce; others may be made with spinach and cheese similar to the Israeli bourekas but made with matzo instead of phyllo or puff pastry.{{cite news |last1=Clark |first1=Melissa |title=Matzo's Next Life: Lasagna Noodle |work=The New York Times |date=12 April 2019 |url=https://www.nytimes.com/2019/04/12/dining/matzo-lasagna-recipe.html |access-date=5 March 2021 |agency=The New York Times }}

Preparation

Matzo lasagna is prepared by adding tomato sauce to the bottom of a casserole dish, the layering large sheets of Matzo over the sauce and then adding a layer of ricotta cheese mixed with parmesan, eggs, herbs and spices, then another layer of sauce, matzo, ricotta cheese mixture, and continuing until the pan is full and is then topped with mozzarella or similar melting cheese and baked until the cheese bubbled and the top is golden brown.{{cite news |author= |title=Rachael Ray's Matzo-Pizza Lasagna |url=https://abcnews.go.com/GMA/recipe/rachael-rays-matzo-pizza-lasagna-14536631 |newspaper=ABC Good Morning America Recipes |access-date=April 6, 2016 }}{{cite web |last1=Gellar |first1=Jamie |title=MATZAH LASAGNA SO GOOD YOU'LL WANT IT ALL YEAR 'ROUND |url=https://jamiegeller.com/recipes/matzah-lasagna-recipe/ |website=Jamie Gellar |access-date=5 March 2021}}
