Cook started her professional motorsport career with an invitation into the 2017 SCCA National Championship Runoffs event at Indianapolis Motor Speedway, finishing ninth in the Formula Enterprise class.{{cite news|url=https://insidemazda.mazdausa.com/press-release/mazda-motorsports-scca-runoffs-preview/|title=MAZDA MOTORSPORTS SCCA RUNOFFS PREVIEW|publisher=Mazda USA|accessdate=28 September 2017}} She would step up to American entry level formula in 2018, running partial campaigns in both U.S.F2000 and Formula 4.{{cite news|url=https://racingnewsworldwide.com/news/sabre-cook-joins-team-benik-cooper-tires-usf2000-powered-mazda-season-opener-weekend/|title=SABRÉ COOK JOINS TEAM BENIK FOR COOPER TIRES USF2000 POWERED BY MAZDA SEASON OPENER THIS WEEKEND|publisher=RacingNewsWorldwide.com|accessdate=6 March 2018}}{{cite news|url=https://racer.com/2018/09/13/f4-u-s-grid-grows-for-penultimate-weekend-at-njmp/|title=F4 U.S. grid grows for penultimate weekend at NJMP|publisher=Racer.com|accessdate=13 September 2018}} Her best results would be a 14th in USF2000 (at Indianapolis) and a 15th in USF4 (at the Circuit of the Americas), however she would only be classified in the former championship standings as points are only awarded to the top 10 in F4.{{cite news|url=https://www.f4uschampionship.com/articles/2010628-sabre-cook-gains-25-positions-in-final-f4-weekend-and-takes-top-honors-in-the-infinity-engineering-academy|title=Sabre Cook Gains 25 Positions in Final F4 Weekend and Takes Top Honors in the Infinity Engineering Academy|publisher=Formula 4 United States|accessdate=24 October 2018}}
She would qualify as one of the 18 permanent drivers for the 2019 W Series, a Formula Regional championship for women.{{cite news|url=https://wseries.com/w-hub/w-series-announces-its-driver-line-up/|title=W Series announces its driver line-up|publisher=W Series|accessdate=28 March 2019|archive-date=2 September 2019|archive-url=https://web.archive.org/web/20190902093304/https://wseries.com/w-hub/w-series-announces-its-driver-line-up/|url-status=dead}} Cook would have an anonymous debut with 13th at the Hockenheimring, but pushed Vivien Keszthelyi out of the race in Zolder which resulted in a drive-through penalty. A race-long battle with Sarah Moore saw her first points at Misano World Circuit Marco Simoncelli, and backed it up with a seventh-place finish in Nuremberg. Two more points in the final round at Brands Hatch saw her take 12th in the championship and the final automatic qualification place for the 2020 championship, but the season was cancelled with the onset of the COVID-19 pandemic. In response, she returned to US-based competition and the Indy Pro 2000 Championship, but ran out of funding after just two rounds.
Cook returned to the W Series in 2021, driving for the Bunker car club entrant. In the first race at the Red Bull Ring, she was involved in an unseen first-corner collision that resulted in a hip injury – an injury that went untreated for the remainder of the season.{{cite news|url=https://www.thedrive.com/features/sabre-cook-knows-how-big-this-moment-is|title=Sabre Cook Knows How Big This Moment Is|publisher=The Drive|date=28 June 2023}} The American failed to score any points that season, the only driver to do so, but had been running in a points-paying position in the final race at the Circuit of the Americas before being spun by Jessica Hawkins.
Ahead of the 2023 season, following 18 months of rehabilitation for her hip injury, Cook was named as the first member of the Porsche Deluxe Female Driver Development Program, granting her 2023 Porsche Carrera Cup North America entry fee aid as well as mentoring sessions with former Porsche factory driver Patrick Long.{{cite news|url=https://sportscar365.com/imsa/porsche-carrera-cup-na/cook-named-in-porsche-deluxe-female-driver-development-program/|title=Cook in Porsche Deluxe Female Driver Development Program|date=March 1, 2023|work=sportscar365.com|last=Dagys|first=John|publisher=John Dagys Media|accessdate=March 1, 2023}} At the sixth round of the season at Indianapolis, driving for KellyMoss, Cook suffered a concussion in a crash and was forced to sit out the remainder of the season having earned a best finish of sixth in Miami.{{cite news|url=https://www.facebook.com/SabreCookRacing/posts/952098959706454/|title=Sabré Cook Racing on Facebook|publisher=Sabré Cook Racing on Facebook|date=15 November 2023}} Cook returned to the series with MDK Motorsports for 2024.{{cite web|url= https://porschecarreracup.us/six-car-squad-for-mdk-motorsports-porsche-carrera-cup-assault/|title=Six Car Squad for MDK Motorsports' Porsche Carrera Cup Assault |date=February 16, 2024|work=PCCNA|accessdate=March 11, 2024}}
Outside of driving, she also holds a Bachelors of Science in Mechanical Engineering from the Colorado School of Mines. She was the 2018 US Global final winner of the Infiniti Engineering Academy – an engineering program for international university students to compete and qualify for positions within Infiniti Global and Renault F1 Team.{{cite news|url=https://autoweek.com/article/formula-one/infiniti-renault-f1-get-technical-boost-young-us-engineering-talent|title=INFINITI, RENAULT F1 GET TECHNICAL BOOST FROM YOUNG U.S. ENGINEERING TALENT|publisher=Autoweek|accessdate=2 November 2018}} Cook is engaged to French musician Alex Vedie.{{cite news|url=https://www.instagram.com/sabrecook/p/DE7y3stxLP_/|title="Soooo about last month… I said yes to being life teammates 💍 🥰 We kept..."|publisher=@sabrecook on Instagram|date=18 January 2025}}
