Since opening, Salt & Straw has gained national media attention for its exotic ice cream flavors, some of which are seasonal. Flavors including Bone marrow with Bourbon Smoked Cherries and Arbequina Olive Oil, are one reason Salt and Straw has been included on lists of America's best ice cream.{{cite web|last=Aiken|first=Kristen|title=Salt & Straw's Newest Ice Cream Is Made With Bone Marrow|date=5 February 2014|url=http://www.huffingtonpost.com/2014/02/05/bone-marrow-ice-cream_n_4731909.html|publisher=Huffington Post|accessdate=6 May 2014}}{{cite web|last=Li|first=Laura|title=31 Days of Artisan Ice Cream|date=9 May 2013|url=http://www.redbookmag.com/recipes-home/tips-advice/best-ice-cream-bourbon-sugar#slide-3|publisher=Redbook|accessdate=6 May 2014}}{{cite web|last=Richman|first=Alan|title=10 Ice Cream Shops You Need to Visit|date=30 July 2012|url=https://www.gq.com/food-travel/alan-richman/201208/10-ice-cream-shops|publisher=GQ|accessdate=6 May 2014}}{{cite news|title=Bits and Bites: News You Can Eat|url=https://online.wsj.com/news/articles/SB10001424052702304803104576427833488788942?mg=reno64-wsj&url=http%3A%2F%2Fonline.wsj.com%2Farticle%2FSB10001424052702304803104576427833488788942.html|newspaper=Wall Street Journal|date = 9 July 2011|accessdate=6 May 2014}}{{cite web|last1=Hanel|first1=Marnie|title=Salt and Straw Portland Chef Ice Cream Series|url=http://www.bonappetit.com/test-kitchen/ingredients/article/salt-and-straw-portland-chef-ice-cream-series|website=www.bonappetit.com|date=30 August 2012|publisher=bon appetit|accessdate=12 June 2014}}

In 2015, Salt & Straw partnered each shop with different elementary schools to create flavors designed by children. Stop, Guac & Roll (avocado-vanilla ice cream with cinnamon-sugar-dusted fried tortillas) and Honey Bear (vanilla custard with chocolate honeycomb candy and edible glitter) were two of the flavors created.{{cite web|last1=Centoni|first1=Danielle|title=Portland Kids Create Salt & Straw's Newest Flavors and They Rock|url=http://pdx.eater.com/2015/4/3/8339967/salt-straw-ice-cream-portland-kid-flavors|website=pdx.eater.com|date=3 April 2015|publisher=Eater|accessdate=12 May 2015}}

In 2016, Salt & Straw developed new flavors from food waste: edible by-products of the food production process. New flavors were made with overripe strawberries, spent brewing grains and near-expiration date vegan mayonnaise. Proceeds from the sales of the featured flavors from its Portland stores ($3,000) were donated to Urban Gleaners, a Portland nonprofit. Salt & Straw creates little food waste or scraps, because its products are frozen. When an item is no longer offered on its menu, any leftover ice cream is donated to a nonprofit.{{cite news |title=Wasted |first=Dan |last=Cook |date=September 26, 2017 |work=Oregon Business Magazine |url=https://www.oregonbusiness.com/article/industry-spotlight/item/18016-wasted?start=4 |access-date=September 28, 2017 |archive-date=September 29, 2017 |archive-url=https://web.archive.org/web/20170929091328/https://www.oregonbusiness.com/article/industry-spotlight/item/18016-wasted?start=4 |url-status=dead }}
