Sapin-sapin is a layered glutinous rice and coconut dessert in Philippine cuisine. It is made from rice flour, coconut milk, sugar, water, flavoring, and coloring. It is usually sprinkled with latik or grated coconut among other toppings. The dessert is recognizable for its layers, each colored separately.{{cite book | last=Sinclair | first=Charles Gordon | title =International Dictionary of Food & Cooking | year=1998 | isbn=9781579580575 | url=https://books.google.com/books?id=fnveo8cyxKkC&dq=sapin-sapin&pg=PA475 | access-date = January 28, 2009}}
The name originates the Tagalog word {{lang|tl|sapin}} which means "underlayer [for cushioning]" (e.g. a blanket sheet, compare with Cebuano {{lang|ceb|hapin}}). When reduplicated as {{lang|tl|sapin-sapin}}, it means "having several layers".{{cite book | title =Manila Bulletin: The Nation's Leading Newspaper : Philippine Centennial Issue : Kalayaan | year=1998 | url=https://books.google.com/books?id=JUNyAAAAMAAJ&q=sapin-sapin | access-date = January 28, 2009}}{{cite web |title=sapin |url=https://www.tagalog.com/dictionary/sapin |website=Tagalog.com |access-date=17 November 2024}}
