Vedge is a fine-dining vegan restaurant located in the Washington Square West neighborhood of Philadelphia, Pennsylvania. In 2018, Food & Wine named them one of the 40 most important restaurants of the previous 40 years.

History

Vedge was opened in 2011{{Cite book|last=Page|first=Karen|url=https://books.google.com/books?id=lg10AwAAQBAJ&q=vegetarian+flavor+bible|title=The Vegetarian Flavor Bible: The Essential Guide to Culinary Creativity with Vegetables, Fruits, Grains, Legumes, Nuts, Seeds, and More, Based on the Wisdom of Leading American Chefs|date=2014-10-14|publisher=Little, Brown|isbn=978-0-316-24417-6|language=en}}{{Rp|47}} by Kate Jacoby and Rich Landau, both of whom are natives of Philadelphia and James Beard Award nominees.{{cite news |last1=Ramnathan |first1=Lavanya |title=Vegetables: Are they the new bacon? Food

Philadelphia magazine called the food "deceptively vegan" and Financial Times, "unexpectedly bold." VisitPhilly.com describes the food as "moving away from the 'protein at the center of the plate' model" and instead focusing on vegetables.

The word "vegan" does not appear on the menu, which chef Richard Landau called "a conscious decision," saying he wanted Vedge to be judged against the best restaurants in Philadelphia rather than against other vegetarian restaurants. Vedge has their seitan custom-formulated by a local artisan producer.{{cite news |last1=Popp |first1=Trey |title=Restaurant Review: Vedge Is Vedge the best vegan restaurant in America? Bon Appetit called the dessert selections "seriously interesting." The Philadelphia Inquirer called their wine offerings a "standout global list."{{cite web |last1=LaBan |first1=Craig |title=Vedge continues to blow carnivores' minds |date=9 December 2017 |url=https://www.philly.com/philly/columnists/craig_laban/vedge-best-restaurants-philadelphia-20171209.html |publisher=Philadelphia Inquirer |accessdate=7 April 2019}}
