Giouvetsi, yiouvetsi, or youvetsi ({{Langx|el|γιουβέτσι}}, {{IPA|el|ʝuˈvetsi|pron}}, from Turkish {{lang|tr|güveç}}) is a Greek dish made with chicken, lamb or beef and pasta, either kritharaki (orzo) or hilopites (small square noodles), and tomato sauce (usually spiced with allspice and sometimes cinnamon, cloves or bay leaves).{{cite web|url=http://www.wisegeek.com/what-is-giouvetsi.htm|title=What Is Giouvetsi? (with pictures)}} Other common ingredients include onions/shallots, garlic, beef stock, and red wine. It is characteristically baked in a clay pot, a güveç, and served with grated cheese.
In Cyprus it is topped with a cheesy bechamel sauce and does not typically contain meat.{{Cn|date=February 2025}}
Paula Wolfert called it "one of the most famous of all Greek Island lamb dishes."{{Cite book|last=Wolfert|first=Paula|url=https://www.worldcat.org/oclc/298538015|title=Mediterranean clay pot cooking : traditional and modern recipes to savor and share|publisher=John Wiley & Sons|year=2009|isbn=978-0-7645-7633-1|location=Hoboken, N.J.|pages=136|oclc=298538015|author-link=Paula Wolfert}}
