Ube cheesecake, also known as purple yam cheesecake, is a Filipino cheesecake made with a base of crushed graham crackers and an upper layer of cream cheese and ube halaya (mashed purple yam with milk, sugar, and butter). It can be prepared baked or simply refrigerated. Like other ube desserts, it is characteristically purple in color.
Description
Ube cheesecake is usually prepared with a base made of crushed graham crackers (cookies, digestive biscuits, and broas can also be used), sugar, and butter. The ingredients are mixed, molded into the desired form, then refrigerated until it has set.{{cite web |title=Ube Cheesecake |url=https://cuddlesandcrumbs.com/2013/11/04/ube-cheesecake/ |website=Cuddles & Crumbs |date=November 4, 2013 |access-date=July 7, 2019}}{{cite web |title=Ube Cheesecake |url=https://theletmeeatcake.com/2011/04/28/ube-cheesecake/ |website=Let Me Eat Cake |date=April 28, 2011 |access-date=July 7, 2019}}{{cite web |title=Ube Cheesecake |url=https://www.thepeachkitchen.com/2015/02/ube-cheesecake/ |website=The Peach Kitchen |date=February 5, 2015 |access-date=July 7, 2019}} Ube halaya is prepared separately, either by making it traditionally or by using store-bought ube halaya in jars. It is mixed with cream cheese, vanilla extract, and (optionally) condensed milk, then poured on top of the base. This layer is usually much thicker than the base. For baked versions, eggs are usually added. Both baked and unbaked versions are chilled before serving.{{cite web |title=Creamy and Luscious Ube Cheesecake |url=https://www.womanscribbles.net/ube-cheesecake/ |website=Woman Scribbles |access-date=July 7, 2019}}{{cite web |title=Ube Cheesecake with Coconut Cookie Crust and Coconut Whipped Cream (Video) |url=https://theunlikelybaker.com/ube-cheesecake-video/ |website=The Unlikely Baker |date=October 19, 2018 |access-date=July 7, 2019}}{{cite web |title=Ube Cheesecake |url=http://www.annieschamorrokitchen.com/ube-cheesecake/ |website=Annie's Chamorro Kitchen |access-date=July 7, 2019}}
Variants
Ube cheesecake can be made into cupcakes or bars. The ingredients can also be modified easily. For example, it can be made using traditional queso de bola, rather than cream cheese. It can also use a variety of toppings or additional ingredients in the base, including coconut, toasted peanuts, whipped cream, or buttercream.{{cite web |last1=Garcia |first1=Bianca |title=Ube Cheesecake Bars |url=http://www.confessionsofachocoholic.com/recipes/filipino/ube-cheesecake-bars |website=Confessions of a Chocoholic |date=August 28, 2017 |access-date=July 7, 2019}}{{cite web |title=Ube Cheesecake |url=https://christinascupcakes.me/recipes/cheesecakes/ube-cheesecake/ |website=Christina's Cupcakes |access-date=July 7, 2019}}{{cite web |title=Quezo de Bola & Ube Duo Cheesecake from Indulgence by Irene |url=http://tableforthreeplease.com/2015/08/quezo-de-bola-ube-duo-cheesecake-from-indulgence-by-irene/ |website=Table for Three, Please |access-date=July 7, 2019}}{{cite web |last1=Sarthou-Lainez |first1=Nikka |title=Special sweet treats you can only get this Christmas season |url=https://www.gmanetwork.com/news/lifestyle/food/592160/special-sweet-treats-you-can-only-get-this-christmas-season/story/ |website=GMA News Online |date=December 12, 2016 |access-date=July 7, 2019}}
