Vepřo knedlo zelo ({{IPA|cs|vɛpr̝̊o knɛdlo zɛlo|lang}}; {{abbrlink|lit.|literal translation}} "pork, dumpling, sauerkraut") is the name of one of the national dishes of the Czech Republic.{{cite web|first=Iva|last=Vokurková|url=http://www.radio.cz/en/section/letter/czech-eating-habits-take-a-turn-for-the-better|title=Czech eating habits take a turn for the better|work=Radio Prague|date=15 March 2009|access-date=10 December 2023}} It consists of three primary ingredients:
- roast pork, usually lean, sliced
- dumpling, either potato or bread, also sliced
- steamed white (or less often red) sauerkraut
The three items are placed separately on a plate, and the pork is covered with its own juice. The dish is believed to have German origins and is also commonly eaten in Slovakia and Austria.{{cite news|title=Vepřo knedlo zelo |url=https://www.tasteatlas.com/vepro-knedlo-zelo |website=tasteatlas.com |access-date=10 December 2023}}{{cite news|title=Vepřo knedlo zelo |url=https://www.196flavors.com/czech-republic-vepro-knedlo-zelo/ |website=196flavors.com |access-date=10 December 2023}}
