Chancaca is a typical Bolivian, Chilean and Peruvian, warm, sweet sauce made of raw unrefined sugar from sugarcane. It is often flavored with orange peel and cinnamon, and is consumed on sopaipillas or picarones.
Chancaca is also a synonym for panela, the unrefined sugar used to make chancaca syrup.{{cite web |title=Chancaca |url=http://rickcooks.com/ingredients/chancaca.htm |access-date=27 March 2013}} Chancaca can be used to prepare chicha de jora, Peruvian maize beer.{{Cite web |title=Chicha de Jora: History and Preparation of an Emblematic Peruvian Beverage |url=https://www.perurail.com/blog-en/typical-food-blog-en/chicha-de-jora-history-and-preparation-of-an-emblematic-peruvian-beverage/ |access-date=January 13, 2025 |website=Peru Rail|date=15 November 2018 |last1=Diaz |first1=Alfredo Arroyo }}
