Career
Leaving Spain, Vincent worked as a line cook at the James Beard Award winner Fore Street restaurant in Portland, Maine. In 2005, he settled in Chicago where he met Jason Hammel, chef-owner of Lula Café. Vincent and Hammel worked together for four years, when Hammel raised the idea of opening another restaurant. Together, they opened Nightwood with a menu that changed daily with fresh ingredients. Under Vincent, Nightwood earned the Michelin Guide's Bib Gourmand Award and was recognized on Bon Appetit magazine's "10 Best Dishes of 2010" list. Vincent left Nightwood in 2014 to spend more time with his family. In 2016, he opened Giant in Logan Square with Ben Lustbader and Josh Perlman. The 1400 square foot restaurant serves American food.{{cite web|last1=Pollack|first1=Penny|last2=Boers|first2=Carly|title=Nightwood's Jason Vincent Will Make a Giant Comeback|url=http://www.chicagomag.com/dining-drinking/February-2016/Giant/|publisher=Chicago Mag|accessdate=2 February 2017}}{{cite web|last1=Gerzina|first1=Daniel|title=Nightwood's Acclaimed Jason Vincent Returning With Tiny Logan Square Restaurant|date=8 February 2016 |url=http://chicago.eater.com/2016/2/8/10938432/jason-vincent-restaurant-logan-square-giant|publisher=Eater Chicago|accessdate=2 February 2017}} The Chicago Tribune rated one of their dishes as part of their list of the best foods of 2016.{{cite web|last1=Vettel|first1=Phil|title=The best things we ate and drank in 2016|date=3 January 2017 |url=http://www.chicagotribune.com/dining/ct-best-restaurant-dishes-2016-20170101-photogallery.html|publisher=Chicago Tribune|accessdate=2 February 2017}} Zagat listed them in their December 2016 article entitled "Most Important Restaurant Openings of 2016 in 15 U.S. Cities."{{cite web|last1=Dobkin|first1=Kelly|title=Most Important Restaurant Openings of 2016 in 15 U.S. Cities|url=https://www.zagat.com/b/most-important-restaurant-openings-of-2016-in-15-u.s.-cities|publisher=Zagat|accessdate=2 February 2017}}
