Etymology

The name afritada is derived from Spanish fritada ("fried"), referring to the first step of the preparation in which the meat is pan-fried before simmering in the tomato sauce.{{cite web |title=Afritada, A Famous Filipino Stew |url=https://www.filstop.com/Afritada-A-Famous-Filipino-Stew/ |website=FilStop |access-date=December 13, 2018 |archive-url=https://web.archive.org/web/20181215223808/https://www.filstop.com/Afritada-A-Famous-Filipino-Stew/ |archive-date=December 15, 2018 |url-status=dead }}

Variants

Afritada has different names based on the main ingredients of the dish. The most common ones are afritadang manok (chicken afritada),{{cite news |title=Chicken Afritada Recipe |url=https://www.pinoyrecipe.net/chicken-afritada-recipe/ |access-date=December 13, 2018}} afritadang baka (beef afritada), and afritadang baboy (pork afritada). Afritada can also be used to cook seafood like fish (afritadang isda) or mussels (afritadang tahong), utilizing the same basic process as when preparing meat afritadas.{{cite web |title=Fish Afritada |url=https://www.mamasguiderecipes.com/2017/04/30/fish-afritada/ |website=Mama's Guide Recipes |date=April 30, 2017 |access-date=December 13, 2018}}{{cite web |title=Afritadang Tahong |url=http://www.panlasangpinoymeatrecipes.com/afritadang-tahong.htm |website=Panlasang Pinoy Meaty Recipes |access-date=December 13, 2018}}

Afritada is also commonly cooked hamonado-style (with pineapple chunks). This sweet variant is usually known as "pineapple afritada".{{cite web |title=Pineapple Chicken Afritada |url=https://www.kawalingpinoy.com/pineapple-chicken-afritada/ |website=Kawaling Pinoy |date=April 7, 2018 |access-date=December 13, 2018}} It is commonly confused with pininyahang manok, braised chicken also made with pineapples. However, the latter does not use tomato sauce.{{cite web |title=Pininyahang Manok (Pineapple Chicken) |url=http://pinoyway.com/pininyahang-manok/ |website=PinoyWay |access-date=December 13, 2018 |archive-url=https://web.archive.org/web/20181215222504/http://pinoyway.com/pininyahang-manok/ |archive-date=December 15, 2018 |url-status=dead }}{{cite news |title=RECIPE: Pininyahang Manok |url=https://news.abs-cbn.com/life/02/07/18/recipe-pininyahang-manok |access-date=December 13, 2018 |work=ABS-CBN News |date=February 7, 2018}}

Similar dishes

Similarly Filipino menudo and kaldereta both use tomato sauce or banana ketchup. However, menudo includes sliced liver, while kaldereta exclusively uses goat meat or occasionally beef. Igado contains liver but no tomato sauce.{{cite web |title=Chicken Afritada (Afritadang Manok) |url=http://www.panlasangpinoymeatrecipes.com/chicken-afritada.htm |website=Panlasang Pinoy Meaty Recipes |access-date=December 13, 2018}}
