dessert consisting of a moist sponge cake covered in a toffee sauce, often served with a vanilla custard or vanilla ice cream.{{cite web|url=http://recipewise.co.uk/sticky-toffee-pudding-recipe|title=Sticky Toffee Pudding Recipe - OAKDEN|date=12 July 2011|website=Recipewise.co.uk|access-date=12 December 2017}} It is widely served in the Lake District in northwest England, where it is a culinary symbol.

Composition

Sticky toffee pudding has two essential components, sponge cake and toffee sauce. The first is a moist sponge cake which contains finely chopped dates. The sponge is usually light and fluffy, closer to a muffin consistency rather than a heavier traditional British sponge, and is often lightly flavoured with nuts or spices such as cloves.{{cite web |last1=Cloake |first1=Felicity |author-link=Felicity Cloake |date=14 April 2011 |title=How to cook perfect sticky toffee pudding |url=https://www.theguardian.com/lifeandstyle/wordofmouth/2011/apr/14/cook-perfect-sticky-toffee-pudding |access-date=24 February 2022 |website=TheGuardian.com}} The toffee sauce is usually made from double cream and different dark sugars (brown sugar, jaggery, molasses sugar, muscovado, panela, peen tong).

Sticky toffee pudding is most commonly served with custard or vanilla ice cream, the vanilla flavour of these complementing the richer flavours of the pudding. It may also be served with single cream.

Origins

The origins of sticky toffee pudding are disputed. Owners of pubs including the Gait Inn in Millington, East Riding of Yorkshire (claimed to 1907) and the Udny Arms Hotel in Newburgh, Aberdeenshire (1960s) claim to have invented it.{{cite web |last1=Davis |first1=Jassy |title=Will the real sticky toffee pudding please stand up? |url=https://www.lovefood.com/news/58989/will-the-real-sticky-toffee-pudding-please-stand-up |publisher=Love Food |access-date=24 February 2022}}

The pudding was popularised in the 1970s by Francis Coulson and Robert Lee, who developed and served it at the Sharrow Bay Country House Hotel in Cumbria.[https://www.telegraph.co.uk/foodanddrink/11059055/Puddings-how-they-have-changed-through-history.html "Puddings: how they have changed through history"]. A take-home version to heat, either in oven or microwave, was developed in 1989 by the owners of the Village Shop in Cartmel, Cumbria.{{cite web |last1=Mayoh |first1=Emma |title=Cartmel sticky toffee pudding celebrate 25 years |date=7 October 2015 |url=https://www.greatbritishlife.co.uk/food-and-drink/cartmel-sticky-toffee-pudding-celebrate-25-years-6975278 |publisher=Great British Life |access-date=24 February 2022}} Their dish became popular, and by the late 1990s was being sold in supermarkets across the UK. The dish is now widely available from multiple manufacturers to bake at home.{{cite web |last1=Miers |first1=Tomasina |title=Who wants pudding? |url=https://www.theguardian.com/lifeandstyle/2009/jul/19/supermarket-desserts-thomasina-miers |work=The Guardian |access-date=5 January 2024}}
