Machacado con huevo, Machaca con huevo, or Huevos con machaca is a dish consisting of shredded dry beef that is scrambled with eggs. Its name means "shredded with eggs" in Spanish. The shredded dry beef, carne seca or "machaca", is said to have originated in the town of Ciénega de Flores, about 20 miles north of Monterrey, Mexico.{{cite web |url=http://adameleyendas.wordpress.com/2013/11/03/el-origen-del-machacado-con-huevo/ |title=El origen del machacado con huevo |date=3 November 2013 |work=Mitos y leyendas de Homero Adame |first=Homero |last=Adame |language=es |trans-title=The origin of machacado con huevo}}{{cite news |url=http://www.telemundo52.com/mexico/Machacado-con-huevo-una-tradicion-muy-regia-254373381.html |title=Machacado con huevo, una tradición muy regia |date=9 April 2014 |work=Telemundo 52 |language=es |trans-title=Machacado con huevo, a royal tradition |author= |access-date=29 April 2014 |archive-url=https://web.archive.org/web/20140429050725/http://www.telemundo52.com/mexico/Machacado-con-huevo-una-tradicion-muy-regia-254373381.html |archive-date=29 April 2014 |url-status=dead }} The early settlers in the area air-cured beef so that it would be preserved.{{cite news |url=http://www.huffingtonpost.com/2013/12/26/machaca-con-huevos-recipe_n_4506332.html |title=Latino Recipes For The Holidays: Machaca Con Huevos |work=Huffington Post |date=26 December 2013 |author=}}{{cite book |url=https://books.google.com/books?id=UX9jAAAAMAAJ&q=Machacado+con+huevo+The+Cuisines+of+Mexico+Diana+Kennedy |title=The Cuisines of Mexico |first=Diana |last=Kennedy |author-link=Diana Kennedy |publisher=Harper & Row |year=1986 |isbn=9780061814815 |pages=244–245}}{{cite news |url=http://www.huffingtonpost.com/2013/12/26/machaca-con-huevos-recipe_n_4506332.html |title=Latino Recipes For The Holidays: Machaca Con Huevos |website=Huffington Post |date=December 26, 2013 |first1=Stephen |last1=Chavez |first2=Art |last2=Rodriguez}}

The basic machacado con huevo is made with eggs and dried beef. Chopped tomatoes, onions and jalapeños or serrano chili peppers can be added, or salsa can be cooked into it, to create another version. This is a traditional dish in the northern Mexican state of Nuevo León that is usually eaten at breakfast, but was also eaten at other meals.{{cite web |url=http://www.alhambrasource.org/news/breakfast-machaca-con-huevos |title=A breakfast of machaca con huevos |date=August 19, 2014 |website=Alhambra Source |first=Stephen |last=Chavez |url-status=dead |archive-url=https://web.archive.org/web/20141224205739/http://www.alhambrasource.org/news/breakfast-machaca-con-huevos |archive-date=December 24, 2014 }} In the US, this breakfast or brunch dish is popular in Texas.{{cite news |url=http://blogs.dallasobserver.com/cityofate/2009/11/on_the_range_machacado_con_hue.php |title=On The Range: Machacado Con Huevos |newspaper=Dallas Observer |date=25 November 2009 |first=Chris |last=Meesey}}{{cite news |url=http://blogs.houstonpress.com/eating/2010/02/machacado_con_huevos.php |title=Machacado con Huevos |newspaper=Houston Press |date=1 February 2010 |first=Robb |last=Walsh}}{{cite news |url=http://www.houstonpress.com/2012-02-09/restaurants/los-corrales-dried-beef/ |title=Morning Machaca: This tiny East End restaurant — attached to a dried-beef factory — serves tasty, old-school Tex-Mex classics |newspaper=Houston Press |date=8 February 2012 |first=Katharine |last=Shilcutt}}

History

According to one legend, the dish was invented in the 1920s by Fidencia Quiroga, who was known locally as "Tía Lencha" (Aunt Lencha).{{cite web |url=http://www.sabinashidalgo.net/articulos/de-solares-y-resolanas/8083-la-tia-lencha-y-el-machacado-con-huevo |title=La tía Lencha y el machacado con huevo |website=SabinasHidalgo.net |date=1 March 2012 |language=es |first=Antonio |last=Guerrero Aguilar |trans-title=Aunt Lencha and machacado con huevo}} Although there is minimal evidence that the dish originated with her, there is little doubt that she popularized it when she began to serve it in her restaurant to construction workers building the nearby Monterrey-Nuevo Laredo highway in 1928.{{cite news |url=http://eleconomista.com.mx/estados/2012/03/22/tia-lencha-ampliara-su-mercado-exportacion |title=Tía Lencha ampliará su mercado de exportación |newspaper=El Economista |date=22 March 2012 |first=Armando |last=Torres |language=es |trans-title=Tía Lencha expand its export market |archive-date=27 January 2016 |access-date=25 April 2014 |archive-url=https://web.archive.org/web/20160127063334/http://eleconomista.com.mx/estados/2012/03/22/tia-lencha-ampliara-su-mercado-exportacion |url-status=dead }} As a result of her association with machacado con huevo, a major manufacturer of the shredded dried beef that is used in it—Productos Alimenticios Tia Lencha SA—is named after her.{{cite web |url=http://www.tialencha.com/Origen.htm |title=Nuestra Historia |work=Tía Lencha |language=es |date= |author=}}
